Hearty and healthy, this Thai style fried rice is cooked with baby kale, garlic, and an abundance of seasonal veggies.
2 tbs vegetable oil 1 cup baby kale
1 tbs minced garlic 1/4 cup basil
1 c. white rice, cooked 1.5 tbs fish sauce
1/2 cup white onion, chopped Pinch of sugar
1/2 cup red pepper, chopped Pinch of ground pepper
Makes 2 servings
Turn stove to medium hot and add vegetable oil to pan. Cook garlic until medium brown, then add cooked rice, onion, red pepper, kale, and basil. Saute until soft. Add fish sauce, sugar, and ground pepper. Stir until cooked. Serve hot and enjoy.
